White Chicken Chili:

The Budget-Friendly Comfort Food You Need in Your Rotation

Looking for a cozy meal that won’t break the bank? White chicken chili should be your new go-to dinner. This creamy, satisfying dish offers a delicious twist on traditional chili, featuring tender chunks of chicken swimming in a rich, mildly spiced broth alongside creamy white beans.

What makes this dish a weeknight warrior is its flexibility and convenience. One of my favorite shortcuts is using a rotisserie chicken from Costco – just shred the meat and you’re halfway there. The rest is simple: white beans, green chiles, and aromatics come together to create magic in your pot.

Serve it over rice to stretch the meal even further, or enjoy it on its own with a sprinkle of cheese and fresh cilantro. The best part? It makes fantastic leftovers, so cooking a big batch on Sunday means easy, delicious meals throughout the week.

Budget-conscious cooks will appreciate that the main ingredients – chicken, beans, and basic spices – are all affordable pantry staples. Plus, you can easily double the recipe to feed a crowd or stock your freezer for future meals.

Ready to add this to your regular rotation? Trust me, your taste buds and your wallet will thank you.

Ingredients

Directions

  1. Add the onions to the pot and start sautéing with oil.
  2. Add the chicken with garlic powder. Cook the chicken all the way through.
  3. Then add the beans, broth, chillies, salt and pepper.
  4. Simmer for 30 minutes
  5. Remove from the heat and add sour cream and heavy cream.

Notes

You can even add some thinly sliced carrots for a little bit more sweetness and texture.
