1 lb sirloin steak, thinly sliced
1 tbsp olive oil
1 red bell pepper, sliced
1 onion, sliced
2 cloves garlic, minced
1 can (15 oz) black beans, rinsed and drained
1 can (15 oz) corn, drained
1/2 cup chipotle in adobo sauce, chopped (plus 1 tbsp adobo sauce)
1/4 cup chicken broth
1/4 cup heavy cream
1/4 cup chopped cilantro
1 lb protein pasta (like lentil or chickpea pasta)
Salt and pepper to taste
Directions
Cook pasta according to package directions.
While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add steak and cook until browned, about 3-4 minutes. Remove steak from skillet and set aside.
Add bell pepper and onion to skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
Stir in black beans, corn, chipotle peppers, adobo sauce, and chicken broth. Bring to a simmer and cook for 5 minutes.
