1 lb pasta (penne, rotini, or your favorite)
1 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
1 lb cooked chicken, shredded
1 can (14.5 oz) diced tomatoes, undrained
1/2 cup chicken broth
1/4 cup heavy cream
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Directions
Preheat oven to 375°F (190°C). Cook pasta according to package directions.
While pasta cooks, heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
Stir in shredded chicken, diced tomatoes, and chicken broth. Bring to a simmer and cook for 10 minutes.
